Easy Brown Rice & Veggie Wrap

Fresh from our culinary department, this easy to make vegan wrap is nutritious, healthy, and very delicious. It can be made with leftover rice and veggies which makes it even better for a time saving meal. It includes one cup of brown rice providing 14.0% of the daily value for fiber, which has been shown to reduce high cholesterol levels. Pop it into the microwave and warm before serving.

Ingredients

1 6-inch whole-wheat tortilla

¼ cup cooked brown rice (see associated recipes)

½ cup roasted vegetables (see associated recipes)

¼ avocado, diced

2 tablespoons Hummus

1 tablespoons diced red onion

2 tablespoons chopped fresh cilantro

Preparation

  1. Place tortilla on work surface.  Spread Hummus on wrap. Spoon rice onto the center of the tortilla. Top with veggies, avocado, onions and cilantro. Roll up the wrap, cut in half and place in a seal-able container. Refrigerate until ready to eat. To serve, microwave for 45 seconds to 1 minute to warm through, if desired.
